To answer the first part of the question,

So basically the widely available membrane lipids are Phospholipids. They possess a polar head group and two hydrophobic tails with hydrocarbons. Most of the tails are fatty acids that can alter in length. The number of carbon atoms in the tails ranges from 14 to 24 carbon atoms. The first tail is made of one or more than one cis-double bond which means that it is unsaturated and the second tail does not have any double bonds which means it is saturated, Each of those double bonds causes to form a small curve in the tail. The potential of phospholipid molecules to get packed opposite one another is because of the variations in the saturation and length of the fatty acids which ultimately results in changes of the fluidity of the membrane

Basically, the shape and also having both the hydrophilic and hydrophobic regions are referred to as the amphipathic nature of the lipid molecules that results in the formation of two layers spontaneously in the aqueous environments. The flow of water in any medium be it through the ground or within our body, carries very vital minerals, nutrients, and chemicals.

The physical traits and also the chemical composition of water make it an outstanding solvent. There is a polar arrangement in the water molecules of the hydrogen with positive electrical charge and oxygen with a negative charge. This factor of water molecule makes it convenient or suitable to draw or attract so many types of molecules.

Water is the one and only that is found in all physical states within the temperatures that occur on our planet naturally.
